Friday Cocktail: Boozy Key Lime Pie Milkshake


Brace yourself for a seriously naughty Friday Cocktail.

I mean, I know all cocktails are a bit naughty already (because of all the booze an' ting) buuuut this one also has about a ton and a half of ice cream in it.  AND BISCUITS.

Hooray for PIE COCKTAILS!

I'm pretty sure it's on the wrong side of 400 calories - but COME ON GUYS, it's nearly the weekend! And you only live once! And, on a more practical note, it's bloody gorgeous but also very filling. You'll only need one. Two if you're... well, greedy me.

*puts special Mary Berry hat on* Those of you with kids might be looking for fun treats to make them during the school break, and this is also perfect for a summer holiday treat - just leave out all of the rum (and make a grownup one for yourself, obviously).

Let the cocktail making commence!

Boozy Key Lime Pie Milkshake recipe (serves one)

Ingredients:

  • 250g vanilla ice cream
  • 35ml lime juice
  • 3 rich tea or digestive biscuits, all bashed up
  • 30ml rum (you can use dark or white - or coconut rum if you're really adventurous)
  • Splash vanilla syrup (optional)
  • Squirty or whipped cream, to garnish
  • Lime zest, to garnish

Shake it!

1. Put the ice cream, lime juice and biscuits in a blender. Blend until nice and smooth.
2. Add rum to taste (it can get quite, well, rummy and it depends how strong you like it) and give it a good stir.
3. If you think it needs it, add a splash of vanilla syrup. It probably depends how good the ice cream you used was.
4. Pour into a highball glass, and top with squirty cream and lime zest.

Mmmm. Pie.
