Friday Cocktail: Rhubarb and Ginger Gin Fizz
With rhubarb deliciously in season at the moment, and the English spring weather in need of a spicy kick at times, I felt the need to sip on a smooth, fruity and satisfying rhubarb and ginger cocktail this weekend.
It's not that boozy either, and it blatantly has some of your five a day in it (ahem), so I may have to have three or four...
(If you do want a bit more booze, you can of course use an alcoholic ginger beer.)
As for the syrup - if you're lucky enough to have some rhubarb in the garden, you can make your own rhubarb syrup super-quickly and easily, but if you're lazy and rhubarbless like me, use the syrup from a tin of rhubarb (this option is also less sweet, which I prefer.)
Rhubarb and Ginger Gin Fizz recipe (serves one)
Ingredients:
50ml Rhubarb syrup
75ml ginger beer
35ml gin
Two to three squeezes lemon juice
Dash angostura bitters
5ml creme de cassis
Shake it!
1. In a cocktail shaker with plenty of ace, build the syrup, gin, lemon juice, bitters and creme de cassis. Shake it like your life depends on it, then strain into a pretty glass.
2. Top up with ice cold ginger beer and give it all a good stir.
